Today's Sustainable Feast in the Garden of Eden

It is a lovely day in the Garden of Eden, and we are giving thanks for more than enough of everything in this abundant life of freedom!  


We made a delicious feast for our volunteers over our handmade earthen rocket stoves in our sustainable outdoor kitchen today! 

We prepared sausages, a huge garden salad, sautéed zucchini and mushrooms, cabbage, lentils, brown rice, and a delicious mashed acorn squash and potato dish!

 


It was a hearty feast with lots of options for our carnivores, vegetarians, and vegans alike.



We started with a beautiful garden salad. We used a bed of mixed greens and topped them with colorful bell peppers, broccoli, grated carrots, and red onions. Lots of color, flavor, texture, and vitamins and minerals in this delicious salad!



We made a wonderful variation of mashed potatoes today! We have been eating lots of acorn squash lately, and we decided to mix some into our classic mashed potato dish. It was a big hit because it was warm, creamy, carb-a-rific, comforting, and had just a hint of sweetness to it too. We mashed the veggies with cream, butter, and salt.



We made another wholesome carb dish with some steamed short grain brown rice. 



We sautéed zucchini, yellow squash, onions, and mushrooms for a flavorful side dish.



We also made a big pot of lentils! These are very easy to make; we boil them in liquid until they are tender. They cook faster than beans but have a similar flavor profile. Sometimes we use filtered water as the cooking liquid, and other times we use broth. 



We sautéed a delicious head of cabbage for another quick, easy, and yummy veggie side dish.



For our carnivores, we offered a platter of spicy organic sausages! We have some people who like to eat meat, some people who don't like to eat meat, and some people who can take it or leave it depending on the day. We honor everyone's preferences and give plenty of options for everyone to have as much food as they want!



It was another wonderful feast shared in great company, and we gave thanks for more than enough of everything in this lovely life!



Food is important, and we hope to inspire people to really take time to eat, enjoy it, and share it with someone you love. We also hope to inspire more and more sustainable practices in regards to food! 



We do all of our cooking over fire, using wood that was otherwise destined to end up in a landfill! This is one of our rocket stoves in action - we built it by hand out of dirt.
