One way we do that is by giving away free food every single day, and we extend the offer to you too because we are here to help one and all: if you or anyone you know wants or needs food, contact us - we will give you free food, no questions asked.
Another way we do that is by preparing daily feasts for our full time volunteers and having communal meals together!
Photographs are a great way to share food across time and space to bring people together, and we also love to share the recipes behind the photos to inspire you to recreate the yumminess in your own kitchen & share with family and friends!
Today, we want to share an excellent food formula for Mexican lasagna!
This recipe is very versatile, and you can use anything you like inside!
Ingredients:
- tortillas (can use corn or flour)
- shredded cheese (cheddar, monterey jack, and pepper jack are nice options)
- filling (chicken, beef, veggies, and/or beans)
- salsa (any kind you like!)
Method:
Prepare your fillings. For today's Mexican lasagna, we used a chicken filling sautéed with green tomatillos, tomatoes, garlic, onions, chili powder, cumin, paprika, salt, and pepper. Instead of spiced up chicken, you could use traditional beef taco filling or pork chili verde.
In addition to meat (or instead of it if you are vegetarian), you could use black or pinto beans, or sautéed veggies with peppers, onions, garlic, squash, carrots, corn, and/or greens.
Place a layer of tortillas in the bottom of a lightly oiled dutch oven or casserole dish. Top this layer with the filling(s) of your choice.
Sprinkle shredded cheese evenly over filling.
Top cheese with salsa.
Smooth is out.
Repeat the layers - tortillas, filling, cheese, and salsa until you get to the top of your pan. End with a layer of tortillas smothered in shredded cheese.
If you have an oven, bake until bubbly and golden brown to your liking. If you have a wood burning stove like we do, put over gentle heat until hot and melty throughout.
Allow to cool slightly, cut a nice slice, top with your favorite condiments (we like extra salsa and sour cream), and feast!!
Food is important, and we hope to inspire people to really take time to eat, enjoy it, and share it with someone you love. We also hope to inspire more and more sustainable practices in regards to food!
We do all of our cooking over fire, using wood that was otherwise destined to end up in a landfill! This is one of our rocket stoves in action - we built it by hand out of dirt.

Thank you so much for this post. I've been wanting to start a restaurant for a while now, and only now have a concept that I really like; but I never took any business classes or anything and have no idea how to bring my vision to reality. I just read and see couple of your post, and I think this will be perfect to get me started! By the way, Cannabis is about to be legalized where I live, and my concept is a cannabis bar , that offers regular food and DIY kits. (inspired by DIY Bar in Portland.) If anyone has specific advice for me, please let me know!
Cool, you can infuse cannabis in oils and use them in cooking. Then you have a cannabis restaurant!
