Egwusi soup delicacy is a Nigeria based food that is eaten but owned by the eastern part of Nigeria known as the Ibos. Today, I will share with you on how to make egwusi soup. This is one of my favourite native soup. Egwusi soup can be made in two ways. It's either by frying method or boiling method. The boiling method is what I will be sharing with you today. Trust me on this it's yummy and easy to prepare. So welcome to Jenny's kitchen. Below are the ingredients you need. INGREDIENTS. 1.Grounded egwusi (Melon) 2 milk cups
2.Beef/chicken /Goat meat which ever you prefer to use. For this menu I will use beef.
- Stock fish
- Crayfish /prawn
- Spices and cube to taste
- Water
- Salt
- Pumpkin leave (ugu)

- Palm oil
METHOD
1.First of all you have to wash the beef thoroughly with salt and put it into a pot.
- Slice the onion into the meat.
- Boil hot water and pour it into a separate bowl and wash the stock fish thorough. Rinse the stock fish with warm water and put it into the pot where the beef meat is.
- Pour in your grounded pepper
- Pour your spices and add some cube at least two cubes.
- Stir all
- Put the pot on the hot plate or burner and allow to cook for 20 mins.
- Add two cups of water and allow to cook for 10mins.
- Pour in the grounded effusive (melon). Stir and cover the pot and allow to cook for 5mins.
- Pour the palm oil and stir.
While it's still cooking, wash your pumpkin leave thoroughly with salt at least twice and slice it. - Pour in the pumpkin leave, stir and cover to cook for 5mins.
The soup is ready. You can eat it with semolina, senorita, yam flour, pounded yam or Fufu which is known as cassava flour.
