Hello steeemians! Proud to share this famous food among us batangenos! I hope one of these days you gotta try eating noodle recipe of Batangas.

Believed to be a symbol of good health and long life, noodles or commonly known as "pancit"made its way to the heart and soul of the Filipino culture. Pancit, like any other cuisine continues to evolve as new culinary ideas sprout to appease the growing demands of the food-loving locals and even international. Through generations, different variety of pancit has surfaced out giving in such delight twist alpng with the distinct ways of cooking it. Nowadays, there are wide selections you can choose from depending on your budget and preferences.

The blooming noodle industry in the province only indicates the people of Batangas' cravinf for dishes that will complement the natuve flavors at the smae time provide nutritional values. Here are the five most common noodle dishes serve in Batangas Restaurants or Pansiterias that will surely leave a mark on your tastebuds.

LOMI

This is the most loved pancit dish here in Batangas. It is easily associated here as it is considered one of our province's specialties. This dish started in Lipa, Batangas. What differentiates Batangas Lomi from any other lomi is that it doesn't have vegetables. A bowl of lomi typically has thick egg noodles, pork liver, fishballs, kikiam and quail eggs, all swimming in a thick broth and occasionally topped with whisked egg. Lomi is best eaten while steaming hot. It is a challenge to be able finish eating before the bowl gets cold. To spice up the taste, depwnding on one's preference, a mixture of soy sauce, calamansi juice and crushed red chili peppers and garlic can be added to the dish as condiment.

PANCIT CANTON

This is one of the most common type of noodles that people here in Batangas love to indulge. It's so prevalent that some companies have decided to develop an instant version of it. Yet, classic pancit canton is far from the ones we can buy at sarsari stores for it is comprised of plenty toppings and seasoning.

This pancit is composed of stir-fried noodles with soy sauce and ginger and then tossed with toppings like shelled shrimp, sliced pork or chicharon and vegetables.

PANCIT GUISADO

The core ingredient of this dish is basically meat and vegetables that are stir -fried depending on someone's preference. Mostly, for this dish, you can choose between pork and chicken dor the meat ingredient while cabbage and carrot for the vegetables. Soy sauce is gradually added to give ot a golden color. To add citrus flavor, calamansi juice is best. And most importantly, you need to have a good quality of rice noodles.
