I would like to share with you the secret recipe for the most tasty apricot jam!!!!My grandmother kept this also from her grandma as well..
Ingredients
The most important is the quality of the first raw..so be very selective..I am very lucky because the apricots are from my grandmother's garden! So try to find unadulterated apricots.
25 big apricots (approx. 1 kg)
1kg cluster sugar
juice from a small lemon
2 small spoons vanilla syrup
Optional
3 leafs of fresh ginger (αρμπαροριζα)
Method
The apricots should be mature enough. We wash them very carefully and we remove the seed.
Then we put the apricots in a small pan and add the sugar and mix them with our hands. We cover the pan with a cling film and we leave it in the fridge for 12 hrs. (suggestion do it in the evening and leave it all night long)
After time elapsed, or the next day, we put the blend in a non-reactive saucepan and boil it slowly. When the apricots are soft enough we reduce the heat and simmer for 20'.
Testing point
We dive a big spoon in the blend and if a light lawyer remains in the upside down side of the spoon then the jam is almost READY!!!
Last steps
We boil the blend for last time by adding the lemon juice
We fill the sterilized jars.
We store them in the fridge and after 1 day our jam is ready for tasting!!!
