[anti-gaspi] Chinese pancake with leek green
Greedy friends, hello?
While shopping every week, I noticed that market gardeners throw away the green of leek, probably at the request of customers... What a pity!
During my trip to China, I had loved the Chinese wafers, lightly flaky, crunchy on the surface and soft inside... They are made with green onion or leek. I was kindly entrusted with the traditional recipe, which I barely adapted...
The shopping list for about 10 cakes:
600 gr. Flour
50 cl of water
The green of 2 leeks
10 cl of vegetable oil (5cl for marinade, 5cl for cooking)
salt
Put your apron on:
Cool the water. Place the flour in a bowl and pour the water. Mix, then form a ball.
Cover the bowl and let stand for 30 minutes.
Slice the leek green as thinly as possible, reserve it in a bowl and marinate it in oil. Salt (generously because the dough is not salty)
Divide the dough into 10 balls.
Spread each dough ball thinly on a floured work surface. Line the top with marinated leek. Fold the dough on both sides to form a rectangular strip. Roll it up, form a spiral, like raisin bread? 9... Make the same with the other balls of dough.
Form the 5 mm patties by spreading the dough again.
In a skillet over medium heat with a base of oil, brown the patties 2-3 minutes per side.
To taste just out of the pan... humm, a treat!
