First post about latvian national foods was about bread foods. I hope you liked it. But now I'll try to introduce you all with some traditional latvian milk foods.
I always have eaten all of milk foods, i really like them, but recently I realised that I have lactose intolerance and that really makes me sad and dissapointed because there are so many tasty foods made of milk! :(

Buttermilk
It's a naturally fermented milk (in some sources you will find it called "curd", in some recipes). Very good for making tasty pancakes; I use it instead of milk or water.
You can checkout one of pancake recipes here (it's in latvian, but you can throw it in google translate, tho). Right side - ingredients:
Cow's colostrum (latv. pirmpiens/jaunpiens)
In Latvia it's very popular. Every latvian who has born until the 90s, will say that "this is the taste of childhood!".
The colostrum is obtained in the first 36 hours after calf birth. It contains more protein, fat, minerals, vitamins and, in particular, immunological substances than basic grown cow's milk. Colostrum contains 15-23% of protein, which is 5-8 times higher than in milk. Vitamin A and carotene are about 10 times more, 2-3 times more vitamin B, vitamins E, D, C than milk.
You can bake it for 20 minutes in 180 degrees. With sugar and cinnamon it will be a good, light dessert or other, salted option is with salt and dill - great "omelet".
I hope I introduced you a little bit and made some interest in those two very delicious foods. In Latvia we have many kinds of cheese, yoghurt, kephir and cream, but it's not so interesting, but you can check it out for your own :)
