Today I feel success. My body is working again, lets see if the feeling stays.
In Sweden where I live we eat a lot of "knäckebröd" (first picture). This is a hard bread made out of rye. Rye contain gluten = I am not allowed to eat this with my current diet-challenge. Hence, I had to make my own substitute "fröknäcke" (second picture).
How to make "fröknäcke":
1 deciliter of sesame seed
1 deciliter of sunflower seed
0,5 deciliter of pumpkin seed
0,5 deciliter flaxseed
2 tablespoons of almond flour
1 tablespoon of "fiberhusk" which I don't know the English term for, but it consist of psyllium peel made into a powder..
2.5 deciliter of water
0.5 teaspoon of salt
1 teaspoon of a mix of crushed anise, cumin and fennel
Put all ingredients into a bole and stir. Let it sit for 10 minutes and then spread it thin across baking sheet. Bake in the oven for 60 minutes on 160 degrees Celsius (convection oven/hot air). After 30 minutes cut into squares and it will be easy to break the bread into nice pieces ones ready.
