potentially depends what you are roasting them in (ive never roasted lentils but boiling them in certain kinds of pans can be toxic.... aluminum for example, Teflon and ive heard even some types of ceramics or stainless steel because there are different types of other metal alloys like nickel in SS (i think) and paint in the ceramic. you have to use your own judgement what u feel comfortable and safe with. i still use stainless steel for example but wouldn't touch aluminum or Teflon. Also if your food is non organic/ gmo yes it could cause cancer sells, there are also nutritionist who says acid food causes cancer this would include both potatoes and lentils. Again use your own judgement (its unfortunate but because of the way MAN has tampered with the world we are constantly at risk to cancer) If you are generally healthy and eat a balanced diet, avoid processed and sugar, drink plenty of good water and avoid alcohol/smoke and too much caffeine (that stress adrenal glands) then hopefully u give ur body the best chance to stay healthy!
