BEANS!
They are so healthy and fiberful, there are so many ways to cook them, so few ingredients necessary, and so few ways to screw them up!
Bean salad:
- 1 can mixed pulses or chickpeas
- Avocado and/or cucumber, diced small
- Any additional vegetables
- Lemon and olive oil
- Salt and pepper to taste
Tuna and bean salad:
- 1 can mixed pulses, butter beans, or any sort of bean
- 1 can of tuna in water
- 1 bag of lettuce or spinach
- Balsamic vinegar
So good!
Roasted green beans:
- Green beans
- Olive oil
- Garlic
- optional- onions
and just 10-15 minutes in the oven
Black beans and rice: (personal favorite, but requires 2 pots)
- 1 can black beans
- 1 cup long grain rice
- 1/2 onion, chopped and fried in olive oil
- optional: Lebanese style, fry up some vermicelli or crushed up angel hair pasta in olive oil before you add the rice and water
Add the onion to the beans with some salt and pepper and voila!
Beans and pasta:
- 1 jar tomato sauce OR chopped tomatoes and some tomato paste
- 1 can butter beans or red haricot beans
- optional: throw in some diced garlic
- A pasta of your choice
