Neutral water has no ions in it (which is often what you get from filtered tap water) - and maybe surprisingly, that doesn't make it ideal for hydration and optimal health. Appropriate ions and minerals actually make water more absorbable in the body.
"Pure" is somewhat debatable, depending on who's standards you're going by. Neutral, filtered, totally stripped water can actually absorb carbon dioxide from the air quite easily, which reacts with the OH- ions and creates a higher concentration of H+ ions, and BAM! you've got weakly acidic water.
We like to filter our water using reverse osmosis and then add fresh herbs to it to give it some super hydrating structure, delicious flavor, and plant powers.
