Carbs don't contain a single necessary nutrient you can't get from meat and vegetables. But I wouldn't call it a scam. If you look at major cultures, almost everyone has a carb staple: taro in Hawaii, rice in China and Japan, bread in the west. The reason is that it takes a lot of just meat or vegetables/fruits/nuts to fill people up. As societies advance, they naturally tend to lean on carbs because carbs fill a calorie deficit. At a time when the world population is exploding and hunger is a major concern, telling people they ought to cut out carbs -- cheap, filling calories that the world has relied upon since large civilizations developed -- may be a very privileged thing to do. There are some other options, like breadfruit, but until a culture of farming and eating it in mass quantities is developed, carbs are vital to sustain people. It's not about flawless nutrition; it's about literally staying alive.
