Fall is my favorite time of the year, mainly because PUMPKIN SPICE ... but who says pumpkin is only good one time of the year!
A co- worker challenged me to make pumpkin spice cookie dough, and I was up for the challenge. She had seen a recipe on buzzfeed but the recipe had loads of butter, processed flour, and processed sugars.
I used my raw chocolate chip cookie recipe you can find [here] I switched the recipe a tad to be paleo friendly. I omitted the oat flour and substituted a few simple ingredients to bring you this raw pumpkin cookie dough recipe!
You will need:
1 cup 100% pumpkin pure
1/4 cup + 1 tbsp coconut oil melted
2 tbsp coconut sugar
1/2 cup honey or maple syrup
1 flax egg (1 tbsp flax + 3 tbsp water)
1/2 tsp vanilla
2 tbsp pumpkin spice
1 cup ground cashews
1/4 cup coconut flour
pinch pink himalayan salt
Cacao nibs
[Optional 1/4 cup collagen- if adding collagen add into the wet ingredients]
Make flax egg by combining 1 tbsp ground flaxseeds with 3 tbsp water. Let sit for 5 minutes.
Combine pumpkin pure, coconut sugar, honey, flax egg, & vanilla in a bowl.
Add in cashews (ground to a powder), coconut flour, pinch of salt, and pumpkin spice.
Stir and place in the freezer for 20 minutes to form.
Roll into 16 bite size balls, in cacao nibs and then store in the refrigerator.
