Ingredients
250 ml (1 cup) of coconut water
16 mini meringues, extra extra, to serve
1/2 ripe pineapple, peeled, chopped, plus 4 extra slices, to serve
"Ice cream" of 500 ml coconut (or frozen dessert without coconut milk)
White rum 80 ml (1/3 cup)
Coconut flakes, fresh or dried, to serve
Select all the ingredients
Method
Step 1
Pour the coconut water into ice cube trays and place in the freezer for 6 hours or overnight, until it freezes.
Step 2
Combine the meringues, chopped pineapple, "ice cream", rum and half of the coconut ice cubes in a blender and mix until combined, soft and sparkling.
Step 3
Divide the remaining coconut ice cubes into four 250 ml serving glasses (1 cup). Divide the pineapple mixture between the glasses. Top with extra meringues, extra pineapple slices and coconut flakes. Serve immediately.
