Slightly not ketogenic, but at least it's real, fermented sourdough!
Years ago, there was a young man named Greg who lived a busy life in a fast-paced New York City. He worked long hours and often found himself grabbing quick, convenient meals on the go, which sometimes left him feeling sluggish and unhappy with his health.
Those feelings weren't there all the time, you see Greg was a little too slim to feel all the effects of processed industrial foods. While he still had lots of energy, when evening came all was lost. The onset of sleep always approached rather early. He thought it was probably due to working early all the time.
One day, Greg met Jessica who loved living, partying and traveling. They fell head-over-heals in love, so much so that they ended up getting married at the greatest party on earth, Burning Man! They were both extremely happy and excited to start a family together. Even though Jessica was in chronic pain, the two of them were able to have a beautiful child who lives a life full of colorful dreams without the constraints of mainstream education.
Unfortunately this child was destined to not have any siblings. Jessica had a miscarriage, but after multiple attempts ending in heart-wrenching losses, the couple wanted to give up. There was too much grief, anger and guilt to try again.
Several years later this happy trio decided to leave the big city to build a homestead. Jessica was still in chronic pain and had been dealing with heart burn for too long, so she decided that she needed to make a change. She had heard about the health benefits of a keto diet from a friend and decided to give it a try. She was thrilled to find that by cutting out carbs and sugar, she had more energy and felt better than she had in years.
Greg eventually followed suit with the keto diet because he saw the benefits first hand, had the time to really learn all about it, and simply for solidarity's sake. It really worked for him too, he was full of energy and felt young again!
This journey towards a better and healthy life made them ponder from time to time about the past. If they had started on that path earlier, would they have been able to make their one child a brother or a sister...
However, as the couple continued on their keto journey, they quickly realized that finding time to cook healthy meals was a challenge in their still busy schedule. They needed fast, easy recipes they could prepare ahead of time and take with them on the go.
They turned to the internet and found a wealth of resources for keto meal prep, including recipes for quick and easy meals they could make in advance and take with them to work. With their newfound knowledge and inspiration, they started preparing meals in batches over the weekend, ensuring that they always had healthy, keto-friendly food on hand, even when they were short on time!
The trio in this story is my own family. While we are mostly keto still today we're mixing it up a bit with other healthy alternatives like Paleo, and Hunter Gatherer style diets.
By the way we still both feel as energetic as 20 year olds, and empowered by the positive changes in our health and lifestyle!!! The key to it all is to really make sure the meat and veggies are grown in a particular way. Animals must be fed what they would naturally eat, and the plants need to be grown without chemicals. If we're going to do grains and legumes, we make sure they're sprouted, and the same goes for nuts.
There's a bit more depth to all of these natural diets but I'll spare you the detail for now. Let's just get on with it and go to the recipes, because you too can take control of your health and well-being!
