Great idea to vary the foods we eat and replace less healthy foods with more healthy foods. But remember that cholesterol is an essential nutrient. Some people have sensitivities to chicken eggs, and quail would be better. But making that change to reduce cholesterol could be counter productive.
Mayo is also a very healthy food , if homemade with extra virgin olive oil and eggs. Not so much if store bought, and made from bad oils. So while hummus is also a great food, you can still have mayo, just make it yourself from a healthy oil.
