CHAOS cook KusaTsuri *4: My beloved noodles!!!

Hello my friends 😁

Finally I found some time to write down the recipe I used for this noodles! I apologize for that! Hope you'll enjoy it anyway!

So first of all what ingredients will you need (for 2 Persons):

  • 250 g spelled pasta
  • 160 g carrots
  • 70 g (red) onions
  • 2 glove of garlic
  • 150 g broccoli
  • 60 g paprika
  • 70 g beetroot
  • olive oil
  • 1/2 teaspoon dried oregano
  • thyme
  • turmeric
  • 1 teaspoon tomato paste
  • 1 tablespoon white almond butter/cream
  • min. 70 ml water
  • salt
  • pepper
  • basil

It seems quite a lot, I know, but this mix makes the noodles taste even better!
But let's start preparing!

First, cook the noddles as long as the package says. Mine took around 6-8 minutes. While the noodles are cooking you can already start preparing the vegetables. This will take some time. Just try to chop everything in small cubes. And by everything I mean: carrots, onions, garlic, paprika, beetroot. And last but not least take some small broccoli florets and add them to the chopped vegetables.

If the noodles were ready while you were chopping just put them out of the water and let them cool down. We will need them alter on.
Prepare a frying pan and put some olive oil in it. Not too much! The vegetables shouldn't swim in it. Fry all the vegetables at once for around 10 minutes over medium heat.

While the vegetables are getting ready you can start preparing the sauce. For this you will have to mix the tomato paste, the white almond butter/cream and the water together. The final result won't look delicious but don't be afraid and trust me 😉

The vegetables should be ready by now. Flavour them with a bit oregano, thyme and turmeric. I love to use more turmeric but it depends on you guys how you like to flavour your dish 😋.

Now we are nearly finished!
Add your sauce to the vegetables in the frying pan and add salt and pepper.

And the only thing left are of course: the noodles!!!
Just add them to the vegetables and sauce and mix everything very well!!!

And now your dish should be looking a bit like this:

Let it simmer for a few more minutes and serve it with some basil on top!

Some tips and suggestions:

  1. Take the deepest/biggest fry pan you can find in your kitchen! Believe me you will need it!
  2. You can add some dried tomatoes to your sauce. I just don't like the taste of it that's why I always leave them out.
  3. If you are not living alone, ask the person to help you with the chopping otherwise you will have to spend some time! It took me alone around one hour!
  4. If your sauce is not liquid enough just add some water but be aware to not overdo it!

Wow never tried beetroots with pasta before. :) Maybe I should give it a go :)

Yeah you should try it! I love the taste of it! It is something new and I often am cooking this dish right now to make the noodles taste more special ;)

Did you use a raw beetroot or a pre-cooked one?
