Kasoy is the local term for Cashew. This is a yellow bell-shaped fruit with its only seed on top of it. The fruit is usually sour but the seeds of it are the one that is so popular and delicious. Cashew nuts are the trademark product of Antipolo. In fact, the syllable Ka
in the city Festival, Sumakah, stands for Kasoy.
Kasoy especially its seeds generated so much job for ordinary people here in Antipolo. It has a nutty taste that is distinct from other sorts of nuts. Its nuttiness is somewhat creamy. I love kasoy
most especially if it is Adobo
flavored.
