Until now the origin of noodles is still a contentious topic. The history of noodles has begun since ancient times thousands of years ago. Some argue that noodles were first made in the Mediterranean region. While others claim that the first technology to create noodles developed in the Middle East. However, the oldest written record of noodles originated from the Eastern Han Dynasty around 200 BC, and in 2005 archaeologists discovered the world's oldest noodle in China. The noodles are about 4,000 years old. So the current evidence shows that the ancient Chinese population also became one of the first nations to produce noodles, although there is still a question whether the Chinese acquire the noodle technology from the Middle East is still a matter of debate.

Four thousand years ago, several major catastrophes swept the city of Lajia on the Yellow River with great speed and power. Earthquakes and floods from river water flows not only destroy the city but also play a role in preserving some long yellow noodles in the mud deposits. When the noodle was discovered in 2005, its existence gave enough confidence to end the argument about who was entitled to claim the inventor of the noodles for the first time.

Gary Crawford, an archaeologist at the University of Toronto in Mississauga in Canada, said the discovery of a 4,000-year-old noodle in China was not a surprise. To determine the noodle making materials, the researchers compared the shape and pattern of starch and seed husks in a bowl of noodles with modern plants. The team concluded the noodles were made from two millet millet-Broomcorn and millet types. The wheat is ground into flour to make the dough, which may then be stretched and stretched. While archaeological evidence suggests wheat was present in China 4,000 years ago but was not widely cultivated until the Tang Dynasty (618 AD-907 AD). Additional evidence is needed to prove that the noodles found in Lajia are the ancestors of either Asian noodle noodles or Italian pasta.

In Chinese culture, noodle is a symbol of longevity. For that, noodles are traditionally served on birthdays and on Chinese New Year as a symbol of longevity. The Chinese version of the birthday cake is a birthday noodle. In Japan, noodles are incorporated into Japanese tea ceremonies, and the making of noodles is considered an art form. Noodles became more important in Japan after World War II, when food shortages rampant and dried food such as noodles became the only food item available. In almost every Asian culture, noodles are associated with long-term well-being and can be regarded as Asian food pleasures.
