Welcome back to my blog, today, I am going to show you how I prepared my Nigerian tomato stew.
Red Tomato stew is one of the best stew you can prepare in Nigeria, especially during the season of fresh tomatoes because you have a lot of tomatoes to prepare this stew, and there will be no need to use processed tomatoes.
I don't like preparing my stew with processed tomatoes because they are not really healthy. I love preparing my red stew with fresh tomato seeds.
So follow me as I show you both the ingredients and the process I used in preparing my stew.
This stew can be used to enjoy any form of carbohydrate.
Ingredients
- A bowl of fresh tomatoes
- Half bowl of fresh pepper
- Five seeds of Habarano pepper
- One bowl of chicken
- Five cloves of garlic
- Ginger
- Chicken spices
- Two balls of onions
- Salt
- One sachet of curry powder
I like my stew to be spicy 🔥
Let's cook.
Firstly, I went to the market to buy the live chicken and get it prepared over there, they killed the chicken and removed the feathers in the market.
The chicken seller helped me cut it into sizes that needed.
Then I bought fresh tomatoes and onions and other things I needed for the stew.
I got home. The first thing I needed to do was to blend the tomatoes and start cooking it to drain the water. It cooked for 10 minutes, and the water dried up.
After that, I also blend the pepper and the onions and the ginger, and garlic for the chicken preparation.
Then I set that aside and moved to wash the chicken, washing the chicken takes a lot of time because it needs to be thoroughly washed, and I also selected some parts that I don't like to eat and throw away.
It took me 30 minutes to wash the chicken and select the good parts that I liked, after washing, I added the blended pepper, onions, and garlic. I also added chicken spices and marinated it for 10 minutes.
I steamed the chicken for 10 minutes, allowing bring out some water, then I added water and cooked till it became very soft, then I removed them from the stock and fried it with soya oil, I just fried the chicken to make it a little bit crunchy.
Finally, we are about to finish the cooking of our red tomatoes stew.
I heat up an empty pot, add 50mls of soya oil, and add sliced onions and tomatoes.
I allowed it to cook for 3 minutes, and I was consistently stirring it so that it doesn't get burnt, then I added the chicken stock and half a teaspoon of salt and allowed it to cook for 10 minutes more, then it's much 😜 ready.
Yes, our stew is ready, and I love enjoying my stew with boiled White spaghetti.
