Making pumpkin and waterleaf soup

Hello friend in food community, today I want to show you how i made a local dish 😜.

After #Spendhbd marketing yesterday, I went to a local market to get some ingredients for vegetable soup, and this vegetable soup came out so nice, take your time to read through the process of making this delicious vegetable soup with some protein.

I made this soup with pumpkin leaves and local spinach, which we call Waterleaf These vegetables are very good for health as they contain lots of minerals and vitamins, so whenever I feel like I am losing strength, I make this delicious and healthy soup.

Vegetable soup is mainly a local soup made in the South-south region of Nigeria known as Akwa-Ibom and Cross River tho they also have a special way of preparing vegetable soup, but everyone enjoys it because it's delicious and healthy.

Ingredients I used.

  • 1 kilo of cow meat (the chest part)
  • 2 kilos of smoked mackerel fish
  • 1 cube of seasoning cube
  • 20 pieces of dry prawn
  • Stockfish
  • 150mls of palm oil.
  • 1 teaspoonful of dry pepper
  • Half a spoon of salt
  • 2 big balls of onions

Let cook

The most crucial aspect of making this soup is a thorough wash of those vegetables to avoid grains of sand in the soup, then it's also important to wash every other ingredient properly, this makes the food healthy and free from turning to food poison.


I took my time to wash the vegetables, the meat, and every other ingredient and set them aside for the cooking.


I placed the washed protein in a dry pot, added seasoning, salt, and onions, and then allowed it to boil without water, it brought out water of its own. Then, after 4-5mins, I added a little water and allowed it to cook for more than 3 minutes.



After 3 minutes, I added the well-washed stockfish and the dry fish and added 3 cups of water because I wanted the meat to cook very well, I like my meat to be soft.


I allowed it to cook for 30 minutes, and then it was ready for more ingredients, while it was cooking, I used my local blender known as Mortar and Pistol to pound the prawn.



The water had dried up a little bit, which is very important because if there is much water the soup would have too much water and I don't want it that way.

So I added the local spinach (waterleaf) and then stirred it very well after just some seconds I added the washed pumpkin leaves

Note this vegetables were all sliced before I could wash and use them to cook.

I also added my blended dry prawn then I poured in the red palm oil, added salt, stirred very well then allowed it to cook for 3 minutes, I don't want the vegetables to overcook.


It came out nice, this soup can be used for any carbohydrate of your choice, I had mine with cooked cassava flour called Garri you can enjoy yours with rice, pounded yam etc.
