Traditional Dishes during Holy week

Hello everyone in Hives!

During Holy week, we Filipinos are cooking or prepare some culture and traditional dish like Kakanin or rice cake A literal “food for the soul,” this native rice cake has been the expression of holiness during the season of lent.

” Kakanin” is native delicacies of filipino made of a sticky rice or glutinous type of rice called "malagkit" or rice flour and it came from two different meaning the word” kain” in English term “to eat” and”Kanin” means rice.

Today I will share to you two different type of recipe we made for the Holy week, these are the Ginataang Bilo-Bilo and Inangit.

“Ginataang Bilo-bilo” –is look like a halo-halo but it was cooked in a creamy coconut milk and its main ingredients is a sticky or glutinous rice ball with various fruity mixture. It is sweet and creamy soup dessert that perfect for any occasion.

Ingredients:

1.Glutinous rice ball

3.White Sugar

6.Buko (Coconut)

7.Sweet Potato (cubes)

8.Ube food color (optional)
9.Vanilla extract

10. Glutinous rice Flour (melted in water)

PS. You can also add some ube jam and Jackfruit locally known “langka” If you want but, since we don’t have that It’s ok because it’s just optional 😊

"Procedures:
1.First you put coconut milk and sugar in a pot and let it boil. Stir well.
2.Put the sweet potato cubes for 3 mins and add the Banana (Saba)
3.Then after 3 minutes you can add the rice balls and cook for 5 minutes. Stir regularly.
4.Once the rice ball is floating you can now add all the Sago (tapioca pearls) and cook until soft and add the buko (coconut) and put the melted glutinous rice to thicken it.
5.Cook for more minutes until your desired texture is reached.

Another one is:

Inangit- this delicacy is easy to make, unlike most rice cakes it is just simply cooked in coconut milk with salt, and it was very similar to suman.

Ingredients:

Procedures:
1.Cook in a pot the “malagkit” or sticky rice in coconut milk (just like your cooking plain rice) and add salt.
2.After the sticky rice was cook you can now put it into another pot with banana leaves you can put some oil so it won't stick and cover it. Let it dry and cooked into low heat until it turns golden brown then cook into another side again. (banana leaves give a very appetizing aroma in the rice)
3.When the rice I done! You can serve it now! As easy as that!

Well, in additional It was perfect to eat while you are drinking coffee 😁💗

So, in the absence of meat during this period of lent we can also make Filipino dessert to satisfy our taste buds!
