Today i Would like to share the recipe of Vegetables khichdi, it a simple and spicy healthy rice and lentil (green gram or moong bean) based dish ideally with lots of Vegetables served for lunch and dinner. Vegetable khidchi is also known as Masala Khichdi, it's one Pot recipe, healthy and Tasty and Easy to Digest. The normal is different from Masala Khichdi as it's contains spices in it and lots of veggies which make it Delicious and Flavorful.

Ingredients šŸ“ƒ


ā€¢ 1 Cup rice.
ā€¢ 1/2 Cup toor dal.
ā€¢ 1/2 Cup moong dal.
ā€¢ 2 tbsp ghee
ā€¢ 1 tsp cumin Seeds.
ā€¢ pinch of asafoetida.
ā€¢ Finely Chopped 2 onion.
ā€¢ Finely Chopped 1 Carrots.
ā€¢ Finely Chopped 1 Capsicum.
ā€¢ 2 tsp ginger garlic paste
ā€¢ 1 tsp turmeirc.
ā€¢ 1 tsp chilli powder.
ā€¢ 1 tsp coriander.
ā€¢ Salt to Taste.
ā€¢ Green Coriander Leaves.

Take out the Ratio of Dal and rice mentioned above, mix it Well.

Rinse with water a couple of times. Drain the water and keep the broken rice and lentils aside.

Also chop the veggies and keep them aside.



Process šŸ§‘ā€šŸ³

Heat 1 tablespoon ghee or oil in a pressure cooker, Add the cumin seeds and Asafoetida, Saute till the cumin sputter.

Add the Veggies, saute still it's get translucent, at low Flame add all the spices, saute for second, till get aromatic.

Ad in soaked rice and dal. Saute for 1 minute until the rice turns aromatic.

Add the Water to coverup the level of Rice & dal.

Cover and pressure cook for 3 whistles or until the rice and dal are cooked well.

When the pressure falls down on its own, then only remove the lid, Add the some fresh green Coriander leaves.

Serve vegetable khichdi hot drizzled with a teaspoon of ghee and With Green Chutney.

Ghee enhance the Flavour of khichdi, paired it up with Raita, papad or pickle.
