Today i would like to share Another Indian cuisine Of Winter Season i.e Mixed Vegetable it is a family favorite, and Iām certain youāll love it too. It's again a single Pot recipe,As I told you earlier, I find it difficult to wash utensils in winter. It's Healthy recipes as it only contains vegetables you can add more veggies as per your preference and Availability at home.
It's easy and quickly made recipe can be paired up with roti, paratha or poori(type of Indian Breads). As winter season is going on India, seasonal vegetables has more flavour and even healthy as compared to hybrid or Chemical grown Vegetables. All you need are some good veggies, a few key spices and a bit of patienc

Ingredients š
ā¢ 1 Chopped potato.
ā¢ 1 Chopped Carrot.
ā¢ 1 Chopped Onion.
ā¢ 1 Chopped Capsicum.
ā¢ 4-5 Cloves of Garlic.
ā¢ 50 Grams of Sweet corns.
ā¢ 250 Grams of Cauliflower.
ā¢ 2 Green Chilli.
ā¢ Green Coriander Leaves for
Garnish.
ā¢ 1 tbsp of Cumin seeds.
ā¢ 3 tbsp of Oil.
ā¢ Pinch of Asafoetida.
ā¢ 1 tbsp of Kashmiri laal Mirch.
ā¢ 1 tbsp of Kasthuri Methi.
ā¢ 2 tbsp of Coriander Powder.
ā¢ Salt to Taste.
Process š§āš³
Heat oil in a kadai (wok), Then add cumin seeds and let them crackle, then add the garlic and chopped Onion,Saute onions till they turn light golden.
Now add the chopped Capsicum cook still it get soft.
Now add all the chopped vegetables into the sauted Onion and add all the spices mentioned above.
Stir it well so that all the veggies get coated with the spices.
Now rough the kathuri methi on the palm, then put into the veggies, add the salt to taste. Cover with the lid at low flame, let the veggies cook until done. Cook uncovered for 3 minutes, then cover and cook until done
Add garam masala and stir. And your mixed veg is ready!
Garnish it with Green Coriander leaves.
Serve it with hot Paratha(indian Bread) and Green Chutney.
