Saludos y abrazos a todos los amigos y amigas de esta sabrosa y divina comunidad de @hivefood , bueno les cuento que estuve en el mercado pesquero de los Boqueticos en Puerto La Cruz y vi una embarcación pesquero el cual bajaban un pez raya, le calcule de 4 a 6 kilos, pero me equivoque, por que tenía 7 kilos y pico; bueno! espere que la prepararán para comprar un kilo ya que estaba bien fresca. Para los que no conocen este pez, les digo que es familia de la manta raya y su estrutura es cartilaginosa, no tiene espina.

Greetings and hugs to all the friends of this tasty and divine community of @hivefood, well I tell you that I was in the fish market of the Boqueticos in Puerto La Cruz and I saw a fishing boat which was lowering a ray fish, I estimated 4 to 6 kilos, but I was wrong, because it was 7 kilos and more; well! I waited for them to prepare it to buy a kilo since it was very fresh. En esta ocasión quiero compartir con ustedes un plato que me gusta mucho que es el guiso de pez raya, el cual tiene diferentes formas de preparación y sobre todo rendidor. Se puede hacer empanadas, arepas rellenas, bollitos rellenos, asopados, pabellón oriental; mi abuela Viviana lo preparaba mucho y lo acompañaba con granos; en fin muchos platos se puede hacer con este rico pez y cada quien le da su toque para degustarlos dependiendo de la región.

This time I want to share with you a dish that I like very much, which is the skate fish stew, which has different ways of preparation and above all yielding. You can make empanadas, stuffed arepas, stuffed rolls, asopados, oriental pavilion; my grandmother Viviana prepared it a lot and accompanied it with grains; in short, many dishes can be made with this delicious fish and everyone gives it their own touch to taste it depending on the region.

Estos son los ingredientes que usaré para la preparación:
•1 Kg de pulpa de raya cocida.
• 1 cebolla grande
• 1 tallo de cebollín
• Perejil al gusto
• 1 pimentón mediano
• 4 ajíes
• 4 dientes de ajo.
•Sal, pimienta y curry al gusto.
•5 cucharadas de aceite vegetal.

These are the ingredients I will use for the preparation:
-1 kg of cooked skate pulp.

  • 1 large onion
  • 1 scallion stalk
  • Parsley to taste
  • 1 medium bell pepper
  • 4 chili peppers
  • 4 cloves of garlic.
    -Salt, pepper and curry to taste.
    -5 tablespoons of vegetable oil.

Ahora vamos con la preparación:
El primer paso es escoger el pescado fresco, en una olla coloca la raya y cubrela con agua y agrégale una cucharadita de sal y ponla a hervir durante unos 10 minutos aproximadamente, cuando esté cocido y lo podemos ver pichando con un tenedor la carne del pescado, cuando esté blando lo sacamos del agua y al enfriar un poco procedemos a desmenuzarlo. Reservo su agua para preparar el arroz y para el guiso.

I reserve its water to prepare the rice and for the stew.

El siguiente paso es lavar las hortalizas y empezar a picar en trocitos pequeños. Monto en la hornilla un caldero a fuego mediano y empiezo a colocar las cucharadas de aceite vegetal y el curry al gusto, cuando esté algo caliente echó todos los ingredientes y sofrío por 2 minutos al transcurrir esté tiempo le agrego la raya desmenuzada, sal y pimienta al gusto y una taza de agua que reserve y remuevo el pescado para que absorba el guiso

The next step is to wash the vegetables and start chopping them into small pieces. I put on the stove a pot over medium heat and start putting the tablespoons of vegetable oil and curry to taste, when it is a little hot I add all the ingredients and sauté for 2 minutes after this time I add the shredded skate, salt and pepper to taste and a cup of water that I reserve and stir the fish to absorb the stew.

Para que se mezcle todos los ingredientes, procedo a tapar el caldero para que el vapor ayude absorber los sabores y dejo que se cocine por unos 5 minutos sin dejar de chequear que no quede seco, y pruebo si está bien de sal. Voy revisando y al final apagó la hornilla, acompañe la raya con arroz, tajadas y cazabe.

To mix all the ingredients, I proceed to cover the cauldron so that the steam helps absorb the flavors and let it cook for about 5 minutes while checking that it is not dry, and test if it is well salted. I check and at the end I turn off the stove, accompany the skate with rice, slices and cazabe.
