If you like beets, then this recipe is perfect for you, it is a raw beet salad, to which you add boiled eggs and tomato, the interesting flavor is given by a simple vinaigrette made of onion, all this combined is absolutely tasty, plus it is a light and fresh meal.
- One grated raw beet
- One chopped onion
- Two boiled eggs, grated
- One chopped tomato
- Oil (four tablespoons)
- Salt
- Vinegar (two tablespoons)
- Mayonnaise or yogurt (optional)
- Chopped chives for garnish.
Salads are not at all complicated to prepare, and this one in particular is made in a few steps, the first thing to do is to make a vinaigrette with the chopped onion, and for this we mix: oil, vinegar, salt and the onion.
Then we mix this onion vinaigrette with the raw beet, we mix well so that the beet is impregnated with the vinaigrette.
Finally, add the tomato and the eggs, now mix everything very well, notice that this salad is not dry, it has a little bit of creaminess thanks to the egg yolks. It is perfect as a single dish, or as an accompaniment to any type of meat, but today I want to eat this salad with a slice of bread, it is delicious!
This salad is great as a sandwich filling, and to get a creamier result we only need to spread the bread with yogurt or mayonnaise.

Ensalada de Remolacha
Si te gusta la remolacha, entonces esta receta es perfecta para ti, es una ensalada de remolacha cruda, a la que se le agrega huevos cocidos y tomate, el sabor interesante se lo da una vinagreta sencilla de cebolla, todo esto combinado es absolutamente sabroso, además es una comida ligera y fresca.
- Una remolacha cruda rallada
- Una cebolla picada
- Dos huevos cocidos, y rallados
- Un tomate picado
- Aceite (cuatro cucharadas)
- Sal
- Vinagre (dos cucharadas)
- Mayonesa o yogurt (opcional)
- Cebollin picado para decorar.
Las ensaladas no son nada complicadas de preparar, y esta en especial se hace en pocos pasos, lo primero que hay que hacer es una vinagreta con la cebolla picada, y para ello mezclamos: aceite, vinagre, sal y la cebolla.
Luego mezclamos esta vinagreta de cebolla con la remolacha cruda, unimos bien para que la remolacha quede impregnada de vinagreta.
Para finalizar agregamos el tomate y los huevos, ahora mezclamos todo muy bien, noten que esta ensalada no queda seca, tiene un poquito de cremosidad gracias a las yemas de los huevos. Es perfecta así de sencilla como plato único, o como acompañante de cualquier tipo de carne, pero hoy quiero comer esta ensalada con una rebanada de pan, ¡queda deliciosa!
Para rellenar sandwich esta ensalada es magnífica, y para obtener un resultado más cremoso solo debemos untar el pan con yogurt o mayonesa.
