I have not made these granola bars for a while now, but I used to make them all the time and when I moved to El Salvador, I totally forgot all about them, until now.
The reason I decided to make my own granola bars again is that we love granola bars, but I don't buy them at the store since they have too many ingredients and really, terrible ingredients when it comes to health.
I did find one kind of granola bars in the store that was not filled with all these terrible ingredients, but for about two months now, I can't find them in the store, so I decided to look for my granola bar recipe and here it is.
It is so easy and fast to make and it only consists of 6 ingredients.
INGREDIENTS
- 4 Tablespoons Coconut Oil
- 1/3 Cup Brown Sugar
- 1/4 Cup Honey
- 1/2 Tablespoon Peanut Butter
- 1/2 Teaspoon Vanilla
- 2 Cups Oats
- 1/2 Teaspoon Cocoa
I also like to add 1 Teaspoon of Cinnamon and 1/2 Cup Shredded, unsweetened coconut, which I also sprinkle on top of the granola bars, but unfortunately, I didn't have any shredded coconut so I didn't use it this time, but it is so much better with the shredded coconut.
You could also use other ingredients like peanuts, chocolate chips, etc. You can either sprinkle it on top of the granola bars or in the mix.
INSTRUCTIONS
First you melt the coconut oil in a small pot.

Next, you add the brown sugar and mix it cooking on a low/medium heat.*
Add the honey and keep on mixing.
Add the peanut butter.
Keep on mixing it, until you can make a line with your mixing spoon to see the clear pot. Now you can add the vanilla.
Next, you can add cinnamon and cocoa.
Now, you can turn the heat off and add the oats and mix it right away. Once the oats are nicely mixed with the mixture, you can also add the shredded coconut or other ingredients like peanuts or chocolate chips.
Now you can place the granola mix on the parchment paper in a small baking pan or on a cutting board and spread it into a one big granola and flatten it using a spatula or wooden spoon or a knife or even your hand it's easier.
If you are going to sprinkle anything on top, do it when the granola mix is still warm and press it lightly so that it sticks better to the granola bar.
Now you can cut the granola bar into smaller granola bars. You can cut it into bigger or smaller pieces. It's all up to you.
And the last step is to cover the granola bar with a clean towel or some foil paper and put it in the fridge for at least an hour, but I usually put it at night and leave it in the fridge overnight so that the granola bars can harden.
And there you go. So easy and so simple and with only 7 ingredients.
I really must say that these granola bars were really good, but I do like them better with the shredded coconut, but that's because I love coconut.
