Sometimes we don't want Sunday to end so we can continue lying on the couch in front of the TV, but last Monday, in my home, it was different, almost at the end of breakfast, "la movida" began and it was not for less because very special guests were coming to have lunch with the family: my cousin and his mother, with whom we had not shared for many years. The menu? pasticho, accompanied with Caesar salad (my way) and as a starter a delicious pumpkin cream brought by my friend Maria, who by the way was also invited along with her husband Raul.
Primer paso: preparar la salsa, con muchos tomates maduros que conseguí en oferta y compré con antelación. Sofreí ajo y cebolla junto con la carne, luego agregué los tomates licuados con ají dulce (conseguí unos con un delicioso aroma que me encantan), pimentón rojo y cebollín. Dejé reducir un poco el líquido, esperé que tomara un intenso color rojo, condimenté y reservé. Ahora tocaba el turno a la salsa bechamel, he modificado la manera de hacerla y me gusta de ésta forma: Sofreí una cebolla picada en cuadritos en media cucharada de mantequilla y un chorrito de aceite, cuando estuvo marchita le agregué la harina y moví enérgicamente, seguido le puse la leche líquida, sal y nuez moscada, seguí moviendo hasta que espesó. Qué rica y especial quedó mi bechamel, también reservé.
First step: prepare the sauce, with lots of ripe tomatoes that I got on sale and bought in advance. I sautéed garlic and onion together with the meat, then I added the tomatoes liquefied with sweet bell pepper (I got some with a delicious aroma that I love), red pepper and chives. I let the liquid reduce a little, waited for it to take an intense red color, seasoned and set aside. Now it was the turn of the bechamel sauce, I have modified the way of making it and I like it this way: I fried a diced onion in half a tablespoon of butter and a drizzle of oil, when it was wilted I added the flour and stirred vigorously, then I added the liquid milk, salt and nutmeg, I kept stirring until it thickened. How rich and special my bechamel sauce was, I also reserved it.
Tocaba ahora armar el pasticho, uso láminas "directo al horno" aunque el resultado es el mismo que con las "tradicional" me parece que con éstas es más práctico pues ahorro gas y tiempo. Coloqué primero una capa de bechamel en el fondo del refractario, luego láminas de pasticho, salsa de carne, queso (amarillo en éste caso) y así sucesivamente hasta culminar con bechamel y parmesano, cubrí el molde con papel de aluminio y al horno por 30 minutos.
Now it was time to assemble the pasticho, I use "direct baked" sheets, although the result is the same as with the "traditional" ones, it seems to me that with these it is more practical because I save gas and time. First I put a layer of bechamel sauce in the bottom of the baking dish, then pasticho sheets, meat sauce, cheese (yellow in this case) and so on until I finished with bechamel sauce and parmesan cheese, covered the baking dish with aluminum foil and baked for 30 minutes.
Mientras se hacía el pasticho corté pan en pequeños cuadrados que llevé a una sartén (sin aceite) y puse a fuego bajo hasta dorar, moviendo constantemente para evitar que se quemaran. Previamente había lavado muy bien la lechuga y puesto en remojo en agua con unas gotas de vinagre, ya escurridas dejé que se secaran. Preparé una vinagreta con un poco de limón, aceite, mostaza, mayonesa y sal, uní todo muy bien y lo agregué a la lechuga junto con los "crotones" (trocitos de pan)y un poquito de parmesano que había reservado del pasticho. Para éste momento ya María había traído la crema de auyama que aún permanecía tibia y desprendía un agradable aroma.
While the pasticho was being made, I cut the bread into small squares that I took to a frying pan (without oil) and put over low heat until golden brown, stirring constantly to prevent them from burning. I had previously washed the lettuce very well and soaked it in water with a few drops of vinegar, then drained it and let it dry. I prepared a vinaigrette with a little lemon, oil, mustard, mayonnaise and salt, mixed everything well and added it to the lettuce along with the "croutons" (small pieces of bread) and a little bit of Parmesan that I had reserved from the pasticho. By this time Maria had already brought the pumpkin cream, which was still warm and gave off a pleasant aroma.

And after a few minutes; the invitation resounded from my lips like a chant "let's go to the table", in absolute obedience everyone without protesting and almost forming a line (like recruits) approached the table that already decked out in its best dress and loaded with flavors; awaited us. At the end of this fraternal agape we were delighted with a delicious bread cake prepared by Maria's hands and so we gave thanks holding hands and I, full of happiness, pleased and grateful for this Monday day full of blessings, began to hum in my mind the Pimpinela's song "I want to toast for my simple people, for love, I toast for the family".

Al igual que tú me gusta ahorrar tiempo con la pasta directo al horno, una que otra vez he comprado por error las tradicionales y me parecen poco prácticas. Si tenemos ya la opción de usar las que vienen casi listas para que nos vamos a complicar agregando un paso más y una olla más para lavar jajaja
