Hello everyone! I hope you're doing wonderfully.
I usually share photos of my outings to eat, but today I want to show you one of my favorite home-cooked and healthy meals.
When I'm in the kitchen, I let my creativity flow so that everything turns out delicious, well-cooked, and with the right amount of protein.
Since I decided to drastically reduce the carbohydrates we consume daily, this type of "recipe" has become my salvation.
Today I prepared diced chicken breast seasoned with sea salt and oregano, chopped carrots, bell pepper, a whole onion, and 2 leaves of chard.
Other times I usually add zucchini in the same pan, but this time I cooked it separately. I cut it into slices, seasoned it with salt and oregano, and grilled it. They are incredibly delicious!
In the photos you can see the step-by-step preparation.
First, I organize all the ingredients to have them ready and chopped at the time of cooking them.
Then, I heat a pan with olive oil over low heat and add the chicken. Once seared, I add the carrots, bell pepper, and onion.
I stir everything and let it cook until the onion caramelizes. After that, I incorporate the chard.
I mix everything again, cover the pan and let it cook over low heat for a few minutes. I don't know exactly how long, but I'm always watching it.
I checked my fridge and found Worcestershire sauce. It's not my favorite, but I added a little to give it a chop suey touch.
Meanwhile, I finished cooking the zucchini. And that's it, ready to enjoy my lunch!
I was very satisfied with this meal.
I hope you liked it and that you are encouraged to prepare this recipe.
