Today's lunch is what we would call a real winter meal.
I made stuffed peppers with homemade bacon and served them with mashed potatoes.
First, I put two large tablespoons of flour, enough oil to cover the bottom of the pot, and some onions to enhance the flavor.
When the onions were nicely caramelized, I added half a liter of strained tomatoes, about a liter and a half of water, and, of course, two to three pinches of salt and a little pepper.
Once it started boiling, I added the peppers, which I had previously stuffed with ground meat and a bit of homemade bacon.
I also placed some extra bacon alongside the peppers.
Since I had more meat than peppers, I used the leftover mixture to make small meatballs and added them to the sauce as well.
After about 45 minutes, I poured in half a glass of hot water mixed with half a teaspoon of brown sugar and a little less than half a tube of tomato concentrate.
Once that was done, I started preparing the potatoes for the mash since they cook much faster than the meat.
I peeled, washed, and chopped them into cubes to speed up the cooking process.
Of course, I always add a little salt to the water.
I always add butter and milk to my mashed potatoes to make them nice and creamy.
If I have homemade butter, I use that, otherwise, I go with store-bought.
This dish pairs perfectly with homemade green olives or a green salad.
After an hour and a half, the meat was ready to eat.
The kids had just come home—one from a driving school lesson and the other from elementary school.
My wife arrived from work half an hour later, and the food was still warm, just perfect for eating.
Since we hadn’t had stuffed peppers in almost half a year, we had all been craving them. Everyone had been asking me to make them—from my wife to the kids—even though my leg is still in pretty bad shape.
But I have another leg and a cane to help me get around!
