There are not many things that beat a real good, hearty South African Potjie-kos. For those who are unfamiliar, a potjie is a traditional South African dish, similar to a hearty stew but cooked in a cast iron pot over an open flame. The name is translated to "Small pot food" and is pronounced "poy-key-cos"
But as I said, in my opinion, there are not many foods that can beat a hot bowl of potjie, so of course when a group of us friends visited Mozambique, our main dinner foods were hot potjies shared around the bonfire.
I, of course, captured the orange flames of the fire dancing in the cool night air before the pot was placed onto. Isn't fire just the most magnificent thing to watch?
The cast iron pot, filled with meats, a wide range of vegetables and potatoes was then placed over the perfectly hot logs and as it began cooking the air was filled with the magical aroma of the ingredients blending together.
Along with the potjiekos we had to have another South African staple, braai wors which is essentially just sausage cooked over a flame.
These are some of my favourite moments in life, sharing a warm hearty South African meal amongst close friends, sharing stories under the stars and in the soft glow of the bonfire in front of us!
