Besides being delicious, pumpkin is a vegetable rich in vitamin A, C, low in calories, fat and carbohydrates. Besides being economical, it is very easy to grow. That's why today I prepared a nutritious dessert with this kind vegetable, especially for this contest of my friend @qurator.
I have made quesillos, cookies, cake and now I bring you some tasty Pumpkin cupcakes. These cupcakes are super fluffy, soft, aromatic and full of flavor. Another advantage is that you can get all the nutrients from this vegetable, in a disguised way, which is perfect when it comes to children.
Cukcakes of Pumpkin
Ingredients:
- 1 cup of boiled Pumpkin
- 100 grams of butter
- 2 eggs
- 1/2 of sugar
- 1/2 cup of milk
- 1 cup of leavening flour
- Baking powder
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon soda
teaspoon cinnamon - 1 teaspoon vanilla
- 1/4 cup rum-soaked raisins (optional).
Intruccions:
- Peel thePumpkin and cut it into squares. Cook it in boiling water until it softens and take it out and make a puree. Mix with the vanilla and set aside.
- Mix the butter and sugar until it becomes creamy and pale.
- Then add the eggs and mix well.
- Add the flour combined with the soda, baking powder, nutmeg and cinnamon
- Milk and pure of Pumpkin are added.
- Add the raisins and preheat the oven to 200°, grease the cake tin or put in layers, and bake for 25 minutes. Or until a toothpick is inserted and it comes out dry.
- Allow to cool for 10 minutes before removing from the mold, and wait for them to cool completely before decorating or consuming.
