Hello, friends🙏 This time having this subject healthy food really good idea. After heavy Christmas treat and new years celebration we need to balance our digestive system. These days we trying to eat some light and low-fat food. And together balancing our diet with some substance which protects us from heavy cold winter.
The food I made today is for 2 servings. full with carbohydrates proteins, vitamins, natural flavonoids, and minerals. also cold-pressed oil with warming herbs is very good in winter. i try to keep their nutritional value whether vegan, veg, or non-veg. Some things are warm but carrots, greens, paprika/bell pepper are at room temperature after the preparation, the temperature is just right.
Today's dinner is a colorful vegetable salad with hummus and flat oatmeal bread.
To make hummus I use
1 cup homecooked chickpeas
1/2 cup almonds soaked and peeled.
1/2 cup sesame seeds
1/2 lime juice
1 tbsp extra virgin olive oil
1/2 tbsp mustard oil
1 tbsp sesame oil
4 cloves of garlic
1/4 red chili pepper
1 tsp each salt, black peppercorn, paprika powder.
1 tsp each oregano and thyme
some parsley.
In the mixer add chickpeas, sesame, almonds, garlic, chili, salt, peppercorn, oregano, thyme red chili powder, parsley.
then olive oil.
and lime juice.
And sesame oil.
I saved some paprika powder and mustard oil for garnish.
The hummus is ready.
I heat mustard oil and with paprika powder to get nice spicy red oil.
The hummus is smiling.
salad ingredients:
5 tops of broccoli washed and steamed.
1 red pepper
1 spring onion
1 green chili
1 cup grated carrot
2 hard-boiled eggs
7-8 cherry tomatoes
1/2 cup sunflower seeds
1/2 cup pumpkin seeds
1/2 cup peeled almonds.
1/4 cup leftover chickpeas from hummus
few sprigs of fresh coriander
few sprigs of fresh mint
1tsp back peppercorn
1 tsp Himalaya salt
1/2 lime juice
1 tbsp olive oil
1 tbsp mustard oil
1 can smoked tuna
1/2 cup black olives.
1/2 ts each mustard seed and cumin seed.
All vegetables are chopped The seeds are roasted, and mustard and cumin are roasted and ground.
To make dressing in the bowl add lime juice, olive oil, and mustard oil black pepper, salt, maple syrup, and mustard and cumin powder.
here is the dressing.
After mixing all vegetables and dressing Our salad is ready. by keeping the tuna fish and eggs separate 2 people can choose a vegetarian or non-veg dinner
Dinner is ready- a nice colorful salad with hummus with Norwegian oatmeal flatbread and some extra olives and carrots.
