Hello qurator greetings 🙏 here is my entry for the qurator top chef recipe from tomatoes. This is the traditional Indian dish called bharava tamater which is served on special vacations, like family gatherings, marriage, or festivals.
* Bharava tamater*.
Stuffed tomatoes in tomato sauce.
Ingredients:
5 tomatoes
2 potatoes
1/2 cup frozen green peas
1/2 cup cottage cheese
1 small green bell pepper
2 green peppers
10 cashew nuts
2 tbsp cooking oil
1 tbsp butter
1/2 tsp sugar.
1/4 cup fresh cream
4-5 branches of cilantro
4-5 cm fresh ginger.
spices:
1 tsp fennel seeds
1 tsp cumin seeds
1 tsp coriander seeds
2 tsp red Kashmiri chili powder
1 tsp turmeric
2 tsp Himalaya salt
slice the top and hollow out the tomatoes by removing the pulp which will be used in the sauce. save the top slices.
blend the pulp in a mixer together with 1 tsp tomato puree. strain to remove the seeds.
chop potatoes and bell pepper.
Grind the three spices coriander seed cumin seed, and fennel seed.
Making stuffing:
in the frying pan add 3/4 tbsp oil after it is hot add the 1.5 tsp crushed spices. make low heat. when the spices start crackling add chopped potatoes and green bell pepper. Sautee for 2 min. add 1 tsp red chili powder, 1tsp salt, 1/2 tsp turmeric. sauté 2 min on low heat avoid burning the spices.
Add 1/2 cup water and cook it until potatoes are 50% done.
add 1 tbsp chopped cilantro and 1/2 tsp finely chopped ginger
stir in 6 chopped cashew nuts and the green peas.
cook 3-4 minutes until all vegetables and spices are done. using a potato masher mash the mixture and add the cottage cheese. our stuffing is ready. let it cool. meanwhile, make the sauce.
Making tomato sauce:
In the pan add 1 tbsp oil add the remaining 1.5 tsp crushed spices. add chopped green pepper and fresh ginger, add 3/4 tsp red chili powder,1/2 tsp turmeric, and 1 tsp salt and stir it to avoid burning. add tomato puree made with tomato pulp. stir it for 1-2 minutes then add butter and sugar. cook for 3-4 min without getting burned.
Add cream, mix it properly and the sauce is ready.
Filling and cooking the stuffed tomatoes.
mix 1/4 tsp red chili powder and 1/4 tsp salt in the 1/4 tbsp leftover oil.
marinate the hollowed tomatoes with chili oil and fill them with the stuffing. cover the tomatoes with the top slice. it is just for use during cooking. when cooked the top cover will be removed.
place the filled tomatoes carefully in the sauce and cook on low heat
7-8 minutes with lid.
Garnish with greens, cashews, and a few drops of chili oil.
enjoy with rice and some steamed vegetables.
to make rice:
In the pan add 1 tbsp butter add 2 Tbsp of each frozen green peas and chopped spring onion. add salt and black pepper add cooked basmati rice and cilantro. mix it the rice is ready.

It's a good idea to stuff tomatoes. I have never done that. Yummm!!!
If you are vegan avoid the cheese in stuffing and instead of butter use peanut butter in the sauce.
