I don't think I've had a milk tart before, but I did think the cover photo looked like the tart was filled with custard, a little like an egg custard pie I've had in the past, only maybe not quite as firm.
I just know this tastes delish !

That's precisely how it is, the filling is made fluffy with the folding in of the stiffly beaten egg white.
