夜市的滷味攤真多 / so many braised food stalls at the night market

其實相比於吃滷味,我更喜歡吃鹹酥雞攤賣的炸物,剛從油鍋撈起來的炸物,炸物的香氣蔓延在空氣中,令人食指大動,不過最近吃太多炸物,想要換吃一些,不那麼容易上花的小吃,剛好看到夜市,怎麼那麼多賣滷味的攤位,讓我好難選擇喔,不過還是要貨比三家,不錯,每家攤位都有把品項價錢標出來,免得我還要一樣一樣的問老闆價錢,看來看去,每家的價錢都差不多,可能是因為這裡競爭激烈,只要一抬價,就立刻沒客人光顧,所以,店家都賣同樣價錢,算是一種潛規則吧。

之前有去加盟展上,詢問賣滷味的加盟主,滷味攤車的經營成本相對較低,不需要高額的裝修和大型設備投資,且滷味產品的毛利率較高,滷味主要食材像是豬肉、雞肉、豆製品、蔬菜等,這些食材的成本相對較低,而滷製過程中的調料和配方是各店家的商業機密,看起來蠻適合小本創業的,但是從我在夜市的觀察,滷味攤車的市場應該已經相當飽和了,早幾年在夜市還可以看到有店家賣麻辣燙,但是近幾年在各大夜市,已經很少看到有賣麻辣燙的店家了,其實假如有看到賣麻辣燙的店家的話,我可能就會吃麻辣燙了。

豆腐、豆干及甜不辣是我的必點品項,我超喜歡吃豆類製品的,蔬菜類我沒有很愛,基本上不會點蔬菜,素雞、豬頭皮及滷大腸看起來都很不錯,點完之後,看老闆俐落的處理食材,翻攪下鍋的食材,而滷味的香氣不停飄來,順便要老闆幫我弄辣一點,滷味要好吃的話,多用一點辣來提味,當拿到熱騰騰的滷味時,我立刻等不及,先吃幾口,感覺辣度適中,就等著回家享用我的大餐了,。




Honestly, compared to braised food, I prefer the fried snacks from salted crispy chicken stalls. The aroma of freshly fried goodies straight out of the oil is just irresistible. But I’ve been eating way too much fried food lately, so I thought I’d try something lighter for a change. As I wandered around, I noticed there were tons of braised food stalls at the night market—it was so hard to choose! Luckily, most of them had clear price tags for each item, so I didn’t have to ask the vendors about the prices one by one. After comparing a few stalls, I realized their prices were pretty much the same, probably because the competition here is so fierce. If anyone raised their prices, they’d probably lose customers right away. It seems like this has become an unspoken rule.

I remember asking about braised food businesses at a franchise expo before. The franchise owners explained that running a braised food stall has relatively low costs since it doesn’t require fancy renovations or expensive equipment. Plus, the profit margin for braised food is quite high. The main ingredients, like pork, chicken, tofu products, and vegetables, are relatively cheap, and the seasoning recipes are trade secrets for each vendor. It sounded like a good option for small businesses. However, from what I’ve observed, the braised food market seems pretty saturated now. A few years ago, you’d see stalls selling spicy hot pot (mala tang) at the night market, but recently, they’ve become really rare. Honestly, if I’d found a spicy hot pot stall, I probably would’ve gone for that instead.

As for my go-to braised food items, I always get tofu, dried tofu, and tempura. I’m a big fan of tofu products! But I’m not into vegetables, so I usually skip those. This time, the mock chicken, pork skin, and braised intestines looked pretty tempting, so I added those to my order. Watching the vendor skillfully handle and toss the ingredients into the pot while the aroma of the braised food filled the air was such a treat. I asked them to make it extra spicy for me because, honestly, braised food tastes so much better with a good kick of heat. As soon as I got my steaming hot bag of food, I couldn’t resist sneaking a bite right there. The spice level was just right—I couldn’t wait to take it home and dig into my little feast!
