The Grand Manier used in the soufflé I mentioned in my previous post is an orange-flavored liqueur from France. It reminds me of Cointreau, another orange-flavored liqueur made from sweet and bitter orange peels.
So, today I'll talk about Cointreau, with photos shot from its distillery boutique in Angers, France.
上篇说到吃的甜点舒芙蕾里用了柑曼怡干邑橙酒,我又想到君度橙酒和Marie Brizard出的各种橙酒。今天就来聊聊常和柑曼怡互换调酒的君度橙酒,照片拍自法国昂热的君度酒厂店。
1849年,昂热的糖果制造商君度兄弟建立了酒厂,到1990年与人头马合并成集团上市之前一直都是家族企业。1875年的时候开始出售君度橙酒,成分是橙皮和甜菜发酵的酒精。酿酒使用的苦橙和甜橙精选自西班牙和拉美非洲等地,因为橙皮精油的含量是影响君度酒品质的重要因素。
受到包装和橙酒名字的影响,我曾一度傻傻地以为君度是种橙色的酒XD,后来亲眼看到才知道原来是透明的。这种酒有种橙子的清新香气 ,可以直接或加冰饮用,作为餐前开胃或餐后消食酒,最常见的用途是调制鸡尾酒,比如有名的玛格丽塔和大都会等。
在西方也常被用在制作巧克力、面包、乳制品等的原料里,我还用它当作黄酒烧过肉不能喝酒我就曲线救国,效果还不错哦。
还有一次调奶咖时发现家里的Amarula用光了,当时也没有Kahlua或Baileys之类的咖啡好伴侣,我就加了炼乳和一点点君度在咖啡里,喝起来也很赞。
那次在昂热的君度酒厂,除了购得一瓶Noir,还买了些含有君度的糖果和巧克力,都带有淡淡的橙子味道。
