There are many traditional types of pithas in our country. In winter, every house in the village is full of pitha. In winter, pitha is made in our house every few days. This milk chitai pitha is very popular in our area. This pitha is made more during various occasions. More events are organized in winter than in the whole year. It is mandatory to have this pita on these occasions.
Rice flour, jaggery and milk are required to make this pitha. This pitha is mostly made with date molasses . At present date molasses is found in many adulterants, so there are many problems in pitha making as well. I will discuss with you the process of making dudh chitai pitha.
Rice should be soaked in water. After soaking for a while, the water should be removed from the rice. Then the rice is flour. A mixture is made by mixing rice flour with water and salt in quantity. This mixture has to be made very well because if the chitai pitha is not good then it will not soak in the milk. This pitha is made in clay oven and clay pots.
In the picture you can see pitha being made in a clay oven. Mixing milk and date molasses in another vessel. After making chitai pitha, it is soaked in milk. This pitha is usually prepared at night and eaten in the morning. This pita is very good to eat cold. There are many such traditional pithas in different regions of our country.
