I've always found it difficult to choose when asked about my preferences in any area. There are so many options, this also happens with food. I think the tastiest is that where the feeling of love is present, either in the way it is prepared, or how it is received.
I feel that the flavours in childhood were more intense, it could be that the quality of the products was better or that the taste capacity, over time, is lost. I have several dishes, which I keep in my list of memories, they are really simple, some of them I made for my children; I try to find the same seasoning or the same aroma, when I prepare them, without any success.
My mother used to prepare soft-boiled eggs, these had a limited cooking time, which made them neither too soft nor too hard.
She would put it in a small glass and then sprinkle bread crumbs on it, I would savor it slowly, I was really fascinated by it.
I remember that when I was watching cartoons on television, the snack was French bread with butter and honey, that was a delicacy for me, it was not only the bread but that atmosphere of tranquility, when one is absorbed in a little cartoon and does not have the worries that one has as an adult.
I also used to make hot oatmeal to which we would then add cheese or bread cubes. I have sought that taste every time I prepare it. My daughter-in-law almost matches it in taste, that is why I like it when I am there with her and she offers me a bowl of hot oatmeal, because it is the closest I have found to that memory that I have.
I love soups.
I once told my mom: "this is my favorite dish," it was a tripe and chickpea soup, which I used to make, I started the day before with the preparations, I soaked the chickpea, because this is usually a pretty hard grain. The next day I chopped the beef belly into squares, which to me looked like little pieces of cloth, and I put this to boil together with the chickpea for quite a while. When it was almost ready, she would add the vegetables: ocumo, yuca, pumpkin and the seasonings: garlic, onion and chives.
When it was ready, they would serve each of us a plate, and I would not stop expressing my preference for that soup, with an exquisite flavor. I think that is where I got my taste for boiled or sancochos.
She cooked very well, everything that was made by her hands had a unique seasoning. One of the dishes that I have made, and that now becomes my son's favorite, is stuffed bell peppers. Something curious happens with this, because when I was a child I hated the taste of bell peppers, I considered it unpleasant and strong for my taste; but as I grew up and ate these stuffed bell peppers, made by my mother, I developed a special affection for them.
The preparation is as follows: first, place the peppers directly on the hot stove so that their skin burns. This is then carefully removed so as not to damage the shape. Then, prepare the ground beef with enough seasoning, diced carrots and add cooked rice, this will be the filling. Once this meat and rice is ready, take each pepper and fill it with it and place them on a plate, standing side by side, with slices of mozzarella cheese on top. Prepare a very thick tomato sauce and cover all these peppers and put it in the oven for about half an hour. The smell that this preparation gives off is delicious and its flavor unbeatable, I really like them a lot.
Now that my children have started a hamburger business called Panchitas Burgers, these have also become my favorites. The way they prepare them, with the seasoning of my oldest daughter, who prepares the tomato sauce and the homemade mayonnaise, makes them hot dogs and hamburgers of different types, very tasty, I really couldn't decide on one of them, they are all very good.

Hot oatmeal is what we call porridge and we eat in the mornings with salt and bananas when we have them. Thank you and that will be my breakfast tomorrow!
