I made these with the rest of the dough I made nearly three weeks ago. I admit I was a little concerned that the dough that had been living in the fridge had lost its oomph. I took it out about an hour before I was ready to use it. After putting it on a floured surface and splitting into three, it all worked out.
This time, I filled the pita with the usual lettuce, tomato and cucumber.
The leftover chicken (from Red Earth Farm) was warmed in a little olive oil spiced with cumin and paprika (smoked would be best, but I can't get it...). Finally, that was topped with garlicky tzatziki. Trish's, of course!
This is another great way to use chicken leftovers. I was really keeping it all local because I served and we ate out of Paul de Jongh's bowls and the Pita recipe is Nina Shand's.
