That looks lovely to eat and I have been thinking about taking part in Veganuary this year again myself. I want to anyhow try and cut back in January as December is a time of lots of food in the holidays.

Mine looked a bit more beige 😂 Having some red and green vegetables certainly lifts it.
I'm thinking about trying vegan cheese this year. I've avoided it as a bit too processed for my liking, but I thought it would be good to test it. I've also seen several recipes for making vegan cheese at home (chickpeas seem to be ubiquitous in those) which I'd like to try.
I am not sure its very healthy, but nice for those dishes where you miss the cheese part of it.
