Healthy Treats | Easter Love from the Birds! Carrot Cake!

The little one is napping…..time to post a quick hello!


Things have certainly changed around the Bird’s nest! With a toddler around full time we don’t have a moment to spare! It’s all about play, eat, nap, play, eat, bedtime, lol. The amount of energy this little guy has is absolutely amazing! I wish I could bottle it and sell it!


Still under quarantine…


We still manage to take many walks and of course bake healthy treats! Yesterday we celebrated Easter and since Carrot Cake is a family favorite I thought it would be a perfect Easter surprise. The recipe is so quick and easy you’ll love it! If you’re like me, buying food at this time is not easy! We can substitute many of the ingredients! Low on eggs? No problem, we’re not using any! Substitutes for flours and sweeteners are available!

Birds Ingredients

  • Shredded Carrots (1 cup packed)
    (No waste! I used my carrot juice pulp!)
  • Shredded Apples, Apple sauce or crushed Pineapple! (1/2 cup)
  • Coconut or Olive Oil (1/4 cup)
  • Vinegar (White or Cider) (2 tsp)
  • Vanilla (2 tsp)
  • Oat or Gluten free Flour (1 ½ cup)
  • Salt (3/4 tsp)
  • Baking Soda (1/2 tsp)
  • Maple Syrup, Swerve, Xylitol (1/2 cup)
  • Raisins (1/4 cup)

Pineapples are inexpensive….


right now so I often buy 2 or three at a time. They’ll ripen over a week or two and freezing is always an option! Sliced and chopped they’ll be great in juices, smoothies and even in frozen nice cream!

After a healthy morning juice…


I had plenty of juice pulp on hand! Using my pulp to make breads, cookies, cakes and even vegetable fritters is a great way to make the most out of our veggies!!

Combining…


the pulp, pineapple, oil, vanilla and vinegar and letting it sit for 10 minutes gave me extra play time before nap!

ingredients and poured into my small spring form pan it was time to bake.

Into the oven…


for 30 minutes at 350 degrees and voila! The cake was ready! Luckily naptime wasn’t quite over; we had time to let it cool before icing. Kite Hill cream cheese blended with a bit of maple syrup and almond milk topped the cake perfectly!

We may be living in uncertain times but I feel truly blessed to have this time with family. (We even enjoyed cake for breakfast this morning!) Although we all can’t be together I know someday we will remember this time; the laughs and tears, books we read and treats we shared. Oh wow this looks like such a super tasty recipe! I haven't seen such a good looking bird cake before, but we will 100% be coming back to this for birthdays! I am just amazed, it never would have occurred to me to use fruit pulp/carrot to bind the cake but it's such a great way to avoid high fat suet. How vital is the maple syrup/oil for helping it hold together? I would like to maybe reduce the amount a little bit if its possible. Oat flour is such a great idea, do you think I would be able to get away with ground oats? It's not as fine as flour but pretty close.

Baking is always magic, but that is so impressive, it looks just like a normal cake with a really nice texture, and clearly suitable for human enjoyment too lol! We can't wait to try this one! Thank you very much for sharing - we are looking forward to some sharing ourselves now tehehe

Feel free to adjust the maple syrup! I always believe less is best anyway 😀 I hope you'll make it some time and let me know what you think! Adjust/modify as you like! I would love to hear

Awww woo yeah, if I can grind normal oats I'm definitely giving this a go and the variable ingredients are great for times like this! I'm venturing out to the supermarket later, and then hopefully we can try it in the next few days. Hopefully I'll get it to hold together without any maple syrup, but I will let you know how it goes - I might even go all out and make myself a matching normal unhealthy upside down cake with any left over fruit ;) if its okay with you, i might even do a post linking back to this one (if it turns out well enough, this might be too optimistic lol)

Edit: forgot to ask what the rough size of the cake tin is!

I gave it a go! I took out some of the fruit as well to help keep the sugar down, and ended up making little bite sized cookie that are really tasty!

There is no cake that comes close in comparison to the incrediblly satisfying taste of the first bites of a fresh, homemade carrot cake topped with cream cheese icing! Mmmm!🍰🥕🐰

I don't like-like carrot cake but that looks really good. I hardly bake these days (bread experiments), with the quarantine and store supplies near me lacking. Yeast is a rarity somehow.

What a delicious cake! It's the first time I see vinegar among the ingredients, though. I wonder what it does to the taste.
I have never tried the combination of carrots and pineaple. It must be quite a treat. I'd add shreded coconut. I just love coconut
