What can we say about children's love for chicken nuggets? Usually, they absolutely incredibly love chicken nuggets! But the one bought outside are usually coated with flour made from wheat. So, I was making these yesterday because we wanted to try Jansen on gluten-free for few months and will it help to lessen his abdominal pain. I DISLIKE FRYING, but for the sake of the children, I did it!
Using chicken breast
Usually, people say chicken breasts tend to be hard and dry, but not anymore with my aunt's method. She poked the meat with fork many times to break down the muscle fibres, you can use the tenderizer tool, but we don't have it, so we literally exercising our biseps triceps doing this, then marinated the chicken breast (cut it into thinner size about half an inch) with a little corn flour, salt and pepper, sesame oil optional.
Gluten-free flour
Firstly, prepare the flour which was combination of potato starch and rice flour, about ratio 4:1, but it depends, I really just added the flour with my estimation and mixed them all up. Fast cooking, you know. =)
Frying part
Prepare the seasoned chicken, the flour and eggs beaten up mixture. Make sure oil is hot enough. Dip the meat into eggs mixture, followed by coated them generously with flour then into the oil. Sorry guys, no photos as I was feeling messy with so many stuff around me, and oily environment, I kept my phone far from me. Cleaning up time was lengthen because frying also seems to make my kitchen oily etc. I had two extra chicken thighs so I fried them as well for my husband and I. The nuggets for the boys.

"Wah, mummy, today you have so much energy, because you didn't like frying but you did this!" exclaimed the eldest. See their happy faces, worth the work and mess!
Vegetables dish
I literally had no more energy left to add somemore mess, so I steamed the broccolis and drizzled with garlic oil and some salt.

Frying can be messy for sure, but I grew up in the south of the USA, fried chicken, fried potatoes, fried ham (salt cured) fried salmon croquettes (hated those when mama made them, and to this day I can't stand the smell of salmon cooking) and even fried bologna were staples
Now, I only fry frozen french fries, occasionally Okra. I don't consider using my cast iron grill pan for steaks and pork chops frying, but maybe it is, and it too can be messy. I ain't giving that up for sure.
