A garden at home is a Garden of hope!

A pleasant day to one and all! It is with pleasure that today I will be sharing another garden update, my garden at home! It's been a while since I posted my home garden. If I'm not mistaken, my last home garden post was about my Ginger harvest. Anyway, let's get started😅!

A morning garden routine every day at home with my kiddos is truly amazing and productive. It is not only a time for us to bond before I go to work during school days but also a time to teach them the importance of having a garden.

Between my two children, my five-year-old son is always my helper in my garden at home. He loves it like I do, hehe... Although he only ran simple errands in the garden like watering the plants or keeping out unwanted weeds, it was more than enough for his age.

I have a few varieties of vegetable plants in my home garden. I have eggplants🍆, Okra, some tomatoes🍅, spinach, a few pots of Onion leaves and lemongrass. Watching these plants grow fast and healthy was inspiring and always set my mood good every morning😊.

In my garden, I only used organic fertilizers such as animal manure, banana peel fertilizer, swamp, and eggshell fertilizer. All were leftovers in my kitchen. At first, I was tempted to use commercialized fertilizer however the main goal was to produce and harvest organic vegetables, so I did not pursue using it.

And then... (A few weeks after)

The most loved view of every gardener! Looking at them and thinking that after weeks of waiting, I would harvest the fruit of our labor soon. It inspires me more!

To all gardeners out there, I know you know the feeling! The excitement and the thrill get bigger every day. I always looked at them closely, checked on them, counted them, and talked to them😅. Sounds crazy but I did! 😂

I am as excited with my tomatoes as I am with my eggplants as well. Who wouldn't, right? Tomatoes and eggplants are expensive in the market and by the looks of it, it seems that I will be deleting those from my budget list in a week or two.

WHAT A RELIEF!🥰

Tomatoes these plenty would save you from spending some money, right in front of my yard!

Indeed, I am overwhelmed by the blessings we have harvested from our garden. At first, I just picked two or three pieces every day to include in cooking our meals. However recently we harvested a lot in a day because we would like to share it with my mother-in-law who had come to visit us!

I am truly grateful not only for the morning blessing but also for my helpful kids. I see that they enjoyed gardening also and were much more excited about bringing our harvests to the table. I am thankful and hopeful that when they grow up, they will continue to love gardening as I set myself as an example to them. Not to mention, they love eating various kinds of vegetables, too! (They are not picky eaters!)

One of my Children's favorite Eggplant Recipe...

Here is the simplest recipe that I always do especially when I'm in a hurry. I use two large-sized eggplants and two small-sized eggs.

First, you just have to grill the eggplant to soften its skin and then peel it off. Next, beat the eggs in a bowl and add a little salt and pepper (you can also add small slices of ripe tomatoes if available.) Then, flatten the eggplant dip it in the egg, and fry it until it becomes golden brown.

Tadaaahhh! Simple and delicious!
