Kuah Asam Keung is one of Aceh's special dishes that is famous for its fresh and spicy sour taste. This sour keung sauce usually uses fish such as tuna, milkfish and other fish. Here is a recipe for making Kuah Asam Keung typical of Aceh:

Ingredients:

500 grams of fish (usually tuna or other sea fish)

1 liter of water

2 stalks of lemongrass, bruised

4 pieces of lime leaves

2 pieces of bay leaves

2 cm of galangal, bruised

1 tablespoon of tamarind water

2-3 large red chilies (or to taste)

5 cayenne peppers (optional for a spicy taste)

3 cloves of garlic

5 shallots

2 cm of turmeric

1 cm of ginger

1 teaspoon of granulated sugar

Salt to taste

How to make Aceh's sour keung sauce:

  1. Make fine spices: Puree the shallots, garlic, large red chilies, cayenne pepper, turmeric, and ginger. You can use a pestle or blender.

  2. Boil the fish: In a pan, boil water with lemongrass, lime leaves, bay leaves, and galangal. Once the water boils, add the fish and let it cook until cooked.

  3. Add the spices: Once the fish is cooked, add the ground spices to the pan and stir well. Add tamarind water, sugar, and salt. Let the spices soak in and the sauce thicken.

  4. Check the taste: Taste the sauce and adjust the sour, sweet, and spicy flavors to taste.

  5. Serve: Once all the ingredients are mixed and the taste is right, remove and serve the warm Asam Keung sauce with rice.

This Asam Keung sauce has a fresh, spicy, and sour taste, typical of Acehnese cuisine that combines spices with strong side dishes, friends of the hive.
