ROASTED GARLIC AND BEETROOT HUMMUS

Greetings beautiful hive people. It feels like ages ago that I made a post or talked to any of you. Life has been hectic the past two months. Many things have happened and in between all the craziness, we moved house too.

Finally, we are settled in and reviving the veggie garden that was completely overgrown. We absolutely love it here and let’s hope this will be the last house in Cambodia we live in. As some of you know, we want to relocate to South America. However, all the corona craziness is keeping us here at the moment.

A change of scenery has done us well and I am sure we can stay another year or 2 in our new small paradise before moving on. We’ve got many exciting things growing in our new garden. A garden roundup post coming soon.....

How have all of you been? I hope I can find some time soon to catch up. After today’s post, I am heading back to the veggie garden to do some work.

But first I want to share a super simple appetizer/snack with you that I made the other day when we had some friends over for dinner.

ROASTED GARLIC AND BEETROOT HUMMUS

Ingredients


  • 1 small beetroot, roasted

  • 1½ cups cooked chickpeas

  • Lime or lemon juice to taste

  • 1 to 2 T tahini

  • 3-5 garlic cloves, roasted

  • 2 T extra-virgin olive oil

  • Ground cumin to taste

  • Himalayan pink salt to taste

  • 2 to 3 T water or aquafaba

Directions


In an oven, roast garlic and red beet. Allow to cool.

First blend/process the chickpeas, garlic, and red beets.

Then add all other ingredients and blend until desired consistency. I like mine a little chunky. If the hummus is too thick to your liking, add more water or aquafaba and blend again.

I served the red beet hummus with seed crackers and microgreens. So good!

Well hello hello and great to see you here. I'm glad your move is done. I know a hive family in South America who would love to swap places with you and go back home to Cambodia. In fact I would love to swap with you but you wouldn't want to come to this cold Canada haha.

I have been a fool all my life. I have never roasted the beets for a beet hummus nor the garlic. That is taking it up a notch.

I know Justin, Srey Pov and the kids personally. We met in Cambodia many years ago. I know they really wanna come back. Since they left so much has changed here though, so not sure if they even would recognize this country. But I know Suriname is not being very good for them either! I hope they soon find a place where they can all live as a happy family.

Haha... I hope you get into roasting now... everything tastes so much better when roasted lol.

Delicicious! I've made similiar before. Roasting the veggies always brings outthat awesome sweetness.

Thanks. Yes. Still in Kep, Cambodia but the other side of the small mountain. I think 1 or 2 more years before the world goes back to normal and we can start planning our move to the other side of the globe How are you?

Toss me a pita chef, I'm digging in! This looks yummy, and of course that bright color really grabs your attention. I haven't seen a beet in ages, miss them very much. We used to juice them so often in Cambodia, now you've got me craving a fat sack of beets. Lost of love from us in Suriname to you and your knappe man.

I know... I miss those yummy juices and you too of course too ღ I give you love to my knappe man lol. I hope to see you soon. But travel is still impossible with the mandatory quarantine of two weeks in hotel in PP on your account! Take care!
