And yea actually I dont like (industrial) sugar, too.
I just use it for my kombucha and my water kefir because they need the sugar to process the fungi metabolism.
this was my first try to make honey myself
but later (in some days/weeks) I will try again and wanna use xylit (but I have to buy it though)
also If you dont want to use so many sugar you can use strength to thicken the liquid. but i didnt have strength here, too xD
i also like this minimalist survival lifestyle
and right now i'm learning to make something delicious with the least amount of utensils and to be healthy as well
