You'll probably like the work of Dr. Will B (theplantfedgut.com). He's vegan, 100% plant based, loves his science research on what truly is good for the gut and is super good at teaching this stuff in an easy to understand way. Oh, and a super cool MD, who is grounded and down to earth. Very grateful for the things I'm learning.

Oh, and yes to your point on cutting out processed foods and refined sugar. It gets easier as your taste buds change. I've been increasing my plant diversity and my taste buds are adjusting quite quickly.
