Hi, Laica, nice article about the Tuba. In my homeland the same way they collect this coconut flower juice in very few places because once it is used for making juice the fruits are not forming on the tree.
In some places, they ferment and make alcohol. In some places, they make jaggery/sugar from it. I had seen it at my aunt's place. They just make jaggery/sugar out of it.

Oh wow, nice to hear about your place. you're right once the juice is collected from the flowers the fruits will be sacrificed. Here, we fermented them for alcohol or vinegar for cooking. I never heard that we could make them into sugar. Thanks for sharing your experience @hindavi . Have a great day!
