I just wanted to share a recipe for these amazingly delicious, protein packed vegan pancakes. I developed this recipe on my own over time, starting with great a banana pancake recipe from my parents, which I first experimented around with to make a vegan version, and then with time eventually added the chocolate and coconut for more flavor, and they are so tasty, filling and nutritious.
Ingredients
1 cup whole wheat flour
1 banana, ripe or overripe, mashed
1 cup milk or water (ideally coconut milk)
1/2 cup shredded coconut
2 Tbsp. vegetable oil
1 Tbsp. sugar
3 tsp. baking powder
½ tsp. salt
1/4 tsp. ground nutmeg
1/2 tsp. Cinnamon
2 Tbsp. Chia seeds
1 Tbsp. Flax seeds
1-2 Tbsp. Cocoa powder, depending how strong a chocolate flavor you want
Notes
For the chocolate, I use raw organic cacao, for its superior nutritional value and antioxidant power, but any cocoa powder would work.
Honey is another nice addition, just add a little honey (like a tablespoon or so) for some extra flavor and sweetness if you like.
Flax seeds are a good source of omega-3s, and you can add more to suite your taste if you like - I don’t usually measure these when I put them in anyway, so the tablespoon is just an estimate and good starting point...
The chia seeds are an egg substitute, high in protein and very nutritious. If you are not vegan, and do not have chia seeds on hand, you can use one egg instead (and then reduce to 3/4 cup of milk)
I often use water when I don’t want to make almond milk and don’t have any other milk on hand, and they turn out just as good; I don’t notice much, if any difference at all. But I do like to use coconut milk if possible to add even more coconut flavor.
For the oil, I use olive oil, but any vegetable oil will do and butter works if you do not care about keeping it vegan.
Top with real maple syrup if at all possible and honey is good too!
When mixing, if the batter is too thick you may find you need to add just a bit more milk or water, but this amount typically works great for me. Then just cook them up in a frying pan, and enjoy!
It will make 2 really large pancakes (as pictured in the top photo) or 4-6 smaller ones...
